Since many years we have been destining part of the Trebbiano vineyards for the grape which becomes cooked must, necessary to produce our Traditional Balsamic Vinegar of Modena PDO. ( Extravecchio, over 25 years of aging)
The company has been taking care of the ‘acetaia’ for over thirty years, where the balsamic vinegar rests in barrels of different types of wood and with the passing of years, it ages gaining its unmistakable aroma.
Food pairings: very versatile, it goes well with seasoned and hard cheeses, raw vegetables, rice, boiled or grilled meat, fish, omelettes, fruit and ice cream. It is also used to decorate appetizers, first dishes, main courses and desserts.
