SUSTAINABLE VITICULTURE AND EXCELLENT WINES
Tradition in a glass
The great Heritage of experience and knowledge has been maintained and treasured by the four generations of the family running the winery. The fourth generation has been taught the most important lesson which refers to the concepts of naturalness, tradition and quality. To preserve these values and be able to enjoy them ‘into a glass of Lambrusco’ , it is necessary follow cultivation processes which exclude herbicides and chemicals, clean the ground mechanically using additive-free mineral fertilizers, and use nitrogen, phosphorus and potassium fetilizers only. Almost no treatment in the name of sustainable viticulture.
The automatized harvest is carried out at night, with temperature monitoring, to save grapes from high thermal shock that would compromise the quality of wine.
Vine training and wine-making process
Lambrusco di Sorbara is a vegetative vine variety. The spurred cordon pruning is not suitable for this vine while the ancient system of arched training prevents the grapes from growing for too long. the cane is cut from a spurred cordon and is tied into a 90° arch with a stake support next to its free standing mother vine. the isolated buds Gems will produce the grapes the next year ensuring their high quality.
Even the wine-making process follows natural methods without forcing any phase of transformation, but enhancing the uniqueness of the vine variety. Technology gives its contribution through advanced tanks at controlled temperatures. The clarifications for natural stabilization are obtained with temperature and physical systems, using no additives: time will play the most important part in the maturation of the product and its clarification.
